The BEST Healthy Cookie Ever
Serves: 15 cookies
  • ½ cup almond flour
  • ¼ cup flax meal
  • 1½ cups non-quick cook oats
  • ⅓ cup flour
  • 1 tsp baking soda
  • ½ cup crunchy peanut butter
  • ¼ cup coconut oil, melted
  • ¼ cup honey
  • ¼ cup brown sugar
  • 1 egg
  • 2 tsp vanilla extract
  • ½ cup chocolate chips
  1. Preheat oven to 350 degrees.
  2. Mix together the almond flour, flax meal, oats, flour, and baking soda.
  3. In a separate bowl, mix together the peanut butter, coconut oil, honey, brown sugar, egg, and vanilla extract.
  4. Stir together the dry and wet ingredients. Mix in the chocolate chips.
  5. Bake on a parchment paper-lined baking sheet for 9-11 minutes. Remove from oven and immediately use a spatula to flatten out the cookies. Sprinkle with sea salt if desired.
  6. Let cool completely before removing from the baking sheet. (if even slightly warm they crumble more easily)
