Skillet Berry Cobbler

Serves: 8 servings
  • 30 oz (4 cups) fresh or frozen mixed berries (I used strawberries, blackberries, and raspberries)
  • 1½ tbsp melted butter
  • 2 tbsp cornstarch
  • ⅓ cup sugar
  • ½ cup whole wheat flour
  • ¼ cup white flour
  • 3 tbsp sugar
  • 1 teaspoons baking powder
  • ¼ teaspoon salt
  • ⅓ cup cold butter, cubed
  • ¼ cup buttermilk
  • 1 tsp vanilla extract
  1. In a medium-sized bowl, mix together the berries, melted butter, cornstarch and sugar. Set aside.
  2. In another bowl, stir together the flour, 3 tbsp sugar, baking powder, and salt. Cut in the butter using a pastry blender or a fork until the mixture is crumbly.
  3. Mix together the butter milk and vanilla extract, then pour the mixture into the flour mixture and gently stir till just combined.
  4. On a floured surface, knead the dough a couple of times and form it into a rectangle that's 1 inch thick. Cut the dough in half and then once more diagonally to make four triangles.
  5. If using mini skillets, place four of them on a baking sheet and evenly divide the berry mixture among them. If using a baking dish or large skillet, add all the berries to the dish/pan. Place a biscuit on top of each skillet (or evenly distributed if using a large skillet/pan)
  6. Bake for 20-22 minutes or until the biscuit is golden brown. Serve garnished with mint, powederd sugar, or ice cream!
