Fluffy Greek Yogurt Biscuits

Serves: 16 biscuits
  • 1 cup white flour
  • 1 cup whole wheat flour
  • 1½ tsp baking powder
  • ½ tsp salt
  • 1 tbsp sugar
  • 6 tbsp cold butter, diced
  • 1 egg
  • ¾ cup plain nonfat greek yogurt (I used Chobani)
  • 1 beaten egg, for brushing
  1. Preheat oven to 400 degrees.
  2. In a medium-sized bowl, mix together the whole wheat flour, white flour, baking powder, salt, and sugar.
  3. Cut in the butter using a pastry cutter, stand mixer, or with a fork until the mixture is crumbly.
  4. In a separate bowl, mix together the egg and greek yogurt. Add the wet and dry mixture together and stir till just combined.
  5. On a floured surface, knead the dough for about 30 seconds, then roll it out to about ¾ of an inch in thickness.
  6. Using a biscuit cutter (the rims of a cup will work as well!), cut out as many biscuits as possible. Then, re-roll the dough and continue cutting out biscuits. Repeat until all the dough has been used up.
  7. Place the biscuits on a parchment paper-lined baking sheet and brush with the beaten egg. Bake for 12-14 minutes or until done. Enjoy!
*Do not try to reduce the salt in this recipe, the biscuits need it for flavor!
