Unbelievable Cheesy Garlic Brussels Sprout Bake

Unbelievable Cheesy Garlic Brussels Sprout Bake- this veggie dish tastes SO decadent, but is under 140 calories!

Hi friends! I’m popping in today to share a delicious recipe that I recently tried out! I initially found One of my 2017 resolutions is to not only eat healthier, but to specifically eat more green veggies! Brussels sprouts used to be my BIGGEST enemy and one of my least favorite foods until I tried them roasted. In my opinion, boiled brussels sprouts are nasty, but stick em in the oven and they are SO good. They lose the bitter taste they have while raw/boiled and get this tasty crispy outer layer.

This recipe takes that goodness to the next level and is so creamy and rich you would swear it’s decadent, when really it’s under 140 calories serving and full of veg! Yum.

Your Freshest & Most Delicious 2017

Ahhh the holidays are over! I always get a certain sense of sadness since the time always passes too quickly, but also a sense of excitement since I LOVE the idea of a new year. A brand spankin’ new year of goals to be achieved, challenges to be overcome, friends, family, travel, and so much more. What are some of your resolutions? Anything you’re hoping to accomplish?

One thing that I’m striving for is cooking more for me. As weird as this might sound, I don’t do much cooking for myself. Oftentimes, my recipes/cooking are planned for the blog and I keep the meals I make for myself and Kyle relatively simple. We eat out way more than I like to admit and it’s pretty rare that I cook or bake something just for the heck of it. Being creative, doing multiple recipe testing, and having to grocery shop constantly takes its toll on you!

This resolution came to me while I was trying out a delicious chicken recipe from Blue Apron. They make things SO easy for you with sustainable ingredients shipped straight to your door and an incredibly well-designed instruction sheet that even the most beginner cook could follow. Blue Apron gives you the chance to pick which meals you want to try online and, before you know it, you have your ingredients shipped straight to your door and conveniently ready when you are! I LOVED being able to choose more exotic recipes that I would not normally attempt in my current cooking safety bubble, like a curried catfish that was out of this world. I turned on some music, poured myself a drink, and got to work. I remember sippin’ my wine and thinking “WOW! This is great!” because everything was just so simple, delicious, and (most importantly to me!) fun. I had dinner finished in 30 minutes and it was absolutely mouthwatering.

Blue Apron is awesome because they strive to introduce their members to new ingredients, flavors, and cooking techniques with seasonally-inspired recipes that are always delicious, fun and easy to prepare. They work directly with family-run farms to help develop a more sustainable food system that brings the freshest ingredients to our kitchens at an affordable price! Blue Apron is offering Apple of My Eye readers a special deal for $30 off their first order or 3 free meals with a subscription. Happy eating, friends!

A big thanks to Blue Apron for sponsoring this post!

Hello from Canada

Hello from Canada! It’s been a hot minute since I’ve blogged with all the holiday madness, photography sessions and weddings, and traveling to Canada for some post-Christmas skiing with the family. I hope you all had a fantastic holiday and aren’t having too much trouble settling back into work and normal life :).

Whistler Canadacanada-1

So Canada! It was a pretty last minute decision for me to come up here, since originally I wasn’t planning on traveling due to a wedding on the 30th that I will be photographing. However, I felt super left out with the rest of my family + cousins getting excited about the trip, so I decided to only stay for 5 days and come home a few days earlier than them. We left at 4:30 am on Christmas Day (we’ve always celebrated on Christmas Eve) and arrived at my family’s condo here in the early evening.

We unpacked, changed into some warmer clothes, and went to grab a late lunch and do a little gear shopping.

The next day we were up early to get ready (putting on all of our ski gear is NO joke) and set out for the slopes! It snowed heavily the entire day and, towards the top of the mountain, it was white-out conditions. You seriously could not tell the earth from the sky since everything was just a brilliant white! We took a break for a lunch of chili, stew, and waffles before setting out again.

With the sun setting so early here, we were done skiing by 3 and stomped back to the house to warm up and relax. We went to an Irish-style pub for dinner and feasted on fish and chips, bangers and mash, guinness, and other eats!

The rest of our week has looked pretty similar to our first day skiing! They’ve mostly followed the pattern of waking up, getting ready, skiing, eating good food, skiing, eating good food, and sleep haha. Here’s a collection of iPhone photos from when we braved taking off our gloves for a second ;).

A few other random thoughts:

  • It’s been snowing so heavily! I can’t remember ever seeing snow falling and it’s been coming down in big fat clumps. I feel like I’m in a snow globe! Also, side note, I had NO idea that snowflakes actually look like the pictures/drawings of them! I always thought that pretty design was always a glorified depiction until I caught a snowflake our first full day here and was like OMG!!$#% IT’S REAL!! They are so beautiful.
  • Canadian news is basically 50% about what’s happening in the US.
  • Canadian chili has mashed potatoes in it and it’s essentially the best thing ever.
  • My dad somehow pulled his groin… putting on a sock.

If anyone is looking to rent a place in Whistler (right by the mountains + restaurants!) shoot me an email! My parents rent out the condo when we aren’t using it and it’s a great place to stay!

Sparkling Cranberry Mint Iced Tea

Looking back on my childhood, it’s easy for me to see how important meals were in bringing my family together to be the tight-knit group that we still are today. Friday nights at my obachan’s house were always reserved as a special time to look forward to throughout the week. There was always the anticipation of getting to see and play with all of my cousins and eat delicious homemade food while the parents chatted. While we’ve all grown up and are scattered with our new jobs and college, we all still make a point to reserve holidays for reconnecting together around the table for good food and even better conversations and laughs. Holidays are a time when we all pour into one house to enjoy the company of family and friends and detach from the busy world around us. It grounds us in the most perfect way and I’ve found that my most cherished memories happen when the table brings us together!…

The Perfect #GiftsThatWorkout

And just like that, we’re through November and on our way to the holidays! This time of year gets crazy as we all try to balance work, friends and family, taking care of ourselves, and gearing up for the perfect madness that makes up these next few months of giving and holiday cheer. Has anyone else been feeling like time is absolutely flying by? I feel like the older I get, the more quickly the months go, by whereas when I was younger, these months used to drag on. That Christmas anticipation felt like it could have lasted months and months on its own, and now I’m looking at my calendar and starting to worry about finding enough time to get all my Christmas shopping done!
