Anyone else in the breakfast slump? 🙋🏼

Lately, I’ve been so unmotivated when it comes to breakfast. Dinners have been fantastic since I’m still on a cooking high from moving into my first apartment and having my own kitchen, but when I wake up in the morning at 5:30 or 6 am to get up with Kyle, the last thing I want to do is make anything that takes more than 2 minutes of effort. Breakfast has been pretty uninspiring lately with a lot of peanut butter toast and cereal!

Zesty Corn and Avocado Salad- fresh, healthy, and absolutely delicious!

You guys! I’m so excited about this recipe for a few good reasons.

1. It’s DELICIOUS. Seriously, you need this in your life. It is bursting with all the best spring/summer flavors: lime, sweet corn, crunchy veggies, creamy avocado, a kick from the chile, and a smidgen of parmesan… because when is that ever a bad idea. I could not keep myself from snacking as I styled the big ol’ bowl for photos.

2. It’s one of the effortlessly healthy recipes. You know when you try to healthify a recipe and it’s just realllllllllyyy not doing it for you? That’s how 95% of healthy cookie recipes are for me (minus this one for The BEST Healthy Cookie Ever) and, when it comes down to it, I usually end up questioning why I even attempted to remake a recipe. It’s Move-In Week

AHHHH!! It’s move-in week! Kyle and I get the keys to our new apartment today and have the all-clear to move in on Friday. I’ll be there on Friday to clean and move in some smaller things and then Kyle and I will be tackling our furniture/finishing up on Saturday! So excited.


Mason Jar Blender Attachment

Okay, HELLOOO life changing. I had no idea you could attach the bottom of a blender to a mason jar. One of the reasons why I don’t often make smoothies is because I hate the cleanup involved with the blender itself. You get so many extra things to clean, but with this method, it’s minimal and basically just the mason jar you drink from! I also love that you can prep smoothies for the week. What a revelation. ;)

Relaxing Before the Madness

Wedding season is about to kick in, so I’m soaking up a few weeks of less stress and a more manageable workload. Wedding days can be both physically and mentally exhausting (I carry about 15lbs of gear on my shoulders and back for 8-10 hours and am constantly thinking or anticipating what’s goin’ on), so I’m trying to savor every minute of calm! I actually have a celebrity wedding (!!!!) towards the end of the month that I’m super stoked on, so I’m simultaneously wanting this in-between period to slow down and go by faster .
