Crispy Green Beans with Garlic Dipping Sauce- a healthy and addictive snack!

For all you veggie haters/dislikers out there, this one is for you!

I remember when I was younger, my mom used to make boiled brussels sprouts and they were just the worst thing (no offense, mom). Bitter, mushy, and soul-sucking. While that last one might be an exaggeration, I can distinctly remember wondering to myself why anyone would choose to have them as a side dish with dinner. Why ruin a perfectly good meal of pot roast and potatoes?!

Fast forward a good number of years and my thinking/cooking methods have evolved. I’ve learned the magic that is roasting veggies and it has changed the way I feel about eating vegetable for the better! While boiling them (in my opinion) makes them taste even worse, roasting brings out the natural sweetness/tastes of vegetables and makes them so much more delicious. Along with that, instead of a mushy grossness, you get a perfect crispness!

This recipe features green beans and is the perfect finger food/snack! The green beans toast up in the olive oil and are perfect for dipping in the garlic parmesan dip. I made this and let my sister (a notoriously super picky eater) try a bite, and she ended up taking the whole platter and polishing off every last green bean with a “Good job, Christine” as she ate the last bite. Success!

You can easily make more green beans for the amount of dip this recipe comes with, but I don’t suggest overcrowding your baking sheet since this will cause the green beans to not crisp up quite as much!

Serves: 5 servings
  • 24 oz green beans
  • 2 tbsp olive oil
  • sea salt and pepper
  • ¾ cup light sour cream
  • 1½ tsp garlic salt
  • 2 tbsp parmesan cheese
  • red pepper flakes, optional
  1. Preheat oven to 425 degrees.
  2. Toss the green beans in the olive oil and salt and pepper thourgouly. Lay evenly on a large baking sheet and bake for 25 minutes, then broil on high for 2 minutes before removing from oven.
  3. While the green beans are baking, mix together the sour cream, garlic salt, and parmesan. If desired, top with red pepper flakes for a small extra kick.
  4. Serve the green beans and garlic sauce together!
