I am so excited to be sharing my perfect Valentine’s Day dinner at home with you guys! As some of you guys might know, Kyle and I have been dating since we were 16, so we’ve had a good number of years of practice when it comes to V-Day celebrations. While we usually go out to eat at a fancy restaurant, we also adore staying home in our comfy pjs and making a delicious dinner that we can enjoy from the comforts of our cute little apartment.
We both love a delicious, juicy steak with mashed potatoes and some tasty sides. It’s total comfort food for us and what we usually order when we go out to eat on special occasions! What I don’t enjoy is spending too much time in the kitchen when I’d rather be hanging out with Kyle and spending quality time with him. Here are a few of my favorite hacks to pull together this mouthwatering spread in less than 30 minutes!
- For your mashed potatoes, pierce 4-5 large yukon gold potatoes with a fork and microwave until tender. Add them to your kitchenaid mixer with 3/4 cup milk, 2 tbsp butter, and salt and pepper to taste until smooth and fluffy! Make sure to not overmix or else they will come out gummy. I prefer using yukon gold potatoes since they have such soft skin that you don’t need to peel them before mashing! They add fiber and texture and take out the hassle and mess of making mashed potatoes.
- For your steaks, don’t skimp out on the quality of the cut! They will be the star of the show. I went with two ribeyes and seasoned them with garlic salt and pepper and seared them in a pan for the best savory flavor.
- You can buy canned creamed corn that comes in the perfect portion for a two-person dinner. That way, you aren’t left with mountains of corn and don’t have to go through the hassle of making it!
- To make a fast and easy spinach side dish, simply whisk 2 tbsp of flour into 3/4 cup milk in a small saucepan and cook until thickened (3-5 minutes). Stir in 16 oz of chopped frozen spinach and season with salt and pepper to taste. Cook for an additional 10-12 minutes or until the spinach is cooked through, stirring in 2 tbsp of grated parmesan at the end.
To really make the dinner stand out, find some fun decorations that scream Valentine’s Day! I chose a soft gold sequined table cloth as my base and scattered some heart cutouts and a heart sign from Walmart! I chose a few of my favorite candles to give the tablescape ambiance and placed the star of the show, Hallmark Signature Cards at Walmart, on top to bring in the final touch of love!
When I first started dating Kyle, I quickly learned what a big deal card-giving is in their family! They are ALWAYS giving each other Hallmark Cards with sentimental handwritten messages inside for any special occasion, whether it be a birthday, Father’s/Mother’s Day, graduations, Valentine’s Day, etc. They’ve definitely rubbed off on me and I love searching for the perfect card for any occasion! I went to Walmart and found the newest collection of Hallmark Signature Cards and couldn’t choose just one! They are handcrafted with 3D elements that give so much extra character and personality to each card!
I mean, come on! How cute are the ones I chose? I am seriously counting down the days till I can give him the cards and am planning on making another trip to my local Walmart to pick up more for family and friends. It’s the perfect way to show your loved ones you care and are thinking about them!
