And just like that, the holidays are over and we are about to jump into 2018! I know I say this every year, but where did the time go? This has been an incredibly transformative year for me and I can’t wait to see what 2018 holds!
Today, I’m sharing one of my favorite meal prep recipes that is so easy and just phenomenal for those of us who are looking to work towards a healthier year as one of your New Year’s Resolutions. I know that many of us (including myself!) struggle with eating in the morning and don’t want to settle for something unsatisfying like a measly protein bar or just a cup of coffee. You need something delicious and fast to go along with your lifestyle! These Meal Prep Vegetarian Breakfast Sandwiches are the perfect grab-and-go way to start your day on the right track!

And MorningStar Farms® isn’t just for vegetarians! I pretty much am up to eat anything, but love the idea of adding in some of their delicious veggie cuisine to reduce my meat consumption in a way that doesn’t make meals harder to make or any less tasty. You need to Taste It To Believe It!
One of the best parts of this recipe is that you can make a big batch on Sunday, freeze the breakfast sandwiches, then heat them up in your toaster or microwave every day. A no-fuss breakfast that’s pretty much ready to go when you are!
So let’s dive right in to how I made these bad boys!
Step 1: Get your ingredients!
You’re going to need eggs, whole wheat english muffins, MorningStar Farms® Original Sausage Patties, fresh baby spinach, and cheddar cheese slices.
Step 2: Whisk your eggs and season with salt and pepper!
Whisk together your eggs and salt and pepper. You are going to need about 1 egg per muffin.
Step 3: Add in chopped baby spinach and stir everything together.
You’ll need about 2 tbsp of chopped spinach per egg.
Step 4: Grease a muffin tin and fill each slot about 2/3 of the way full with your egg mixture.
Bake in an oven pre-heated at 350 degrees for 20 minutes. Remove and let cool.
Step 5: Melt your cheese!
Place one slice of cheese on the bottom half of each english muffin. Move the english muffin slices to a baking sheet and bake for 3-5 minutes, or until the cheese is nice and melty.
Step 6: Assemble your Vegetarian Breakfast Sandwiches!
Start with the half of your english muffin that has the cheese melted on top. Place the baked egg on top (I squished mine a little beforehand to flatten it out more). Add on your sausage patty and top with the other half of your english muffin.
And that’s it! How easy, right? If you want to store your breakfast sandwiches, just wrap them in tin foil or parchment paper and heat them up again in the toaster or microwave.
