With the warmer weather approaching, I thought a fruit dessert (or breakfast… or snack… or second lunch or first dinner) recipe was called for. There’s something about the thought of summer approaching that makes me want to eat #allthefruit and, lately, I’ve been going through berries like crazy.
What has everyone been up to lately? I’ve been trying to stay consistent with my recipe posts, but I’ve been having a hard time to keep up with my more “fun” behind-the-scenes posts like Friday Favorites or weekend recaps. To be honest, I’ve been spending the majority of my time studying at coffeeshops or the library and photographing weddings/senior portraits that I don’t really feel like I have anything of interest to share. Kyle is also pretty busy, so our hot date nights include textbooks and scientific papers with the occasional Game of Thrones episode thrown in. We’ve been pretty boring lately !
While the social life has been pretty dull, the photography business is taking off (insert excites squeal). This month is going to be crazzzzzzzyyyy with 23 portrait sessions and 4 weddings, along with trying to get through my second round of midterms. The blog is always the first thing to suffer when I start to feel overwhelmed, but it makes me sad to feel distant from my readers and bloggy friends! Miss you guys!
But back to this bread! While my eats lately have been a little –ahem– subpar on the healthy side (think most meals on the run or out since I don’t have much time to cook), I tried to create a healthier, but still delicious, recipe that I can snack on for breakfast or alongside the 5 million cups of coffee I have a day. There is nothing more comforting to me than a big cup of Jo’ with a side of something sweet, and this Strawberry Oat Bread completely hits the spot.
To lighten it up, I used a combination of whole wheat flour alongside with white flour, oats, and applesauce and olive oil instead of butter. That’s right! There’s not a pat of butter to be seen in this recipe, yet it is still moist and tender and utterly drool-worthy. Slices of sweet, ripe strawberries permeate through the bread and add extra tones of sweetness to every bite. Swoooooon.
- ¾ cup white flour
- ¾ cup whole wheat flour
- ¾ cup rolled oats
- 2 tsp cinnamon
- 1 tsp baking powder
- pinch salt
- ½ cup applesauce
- ¼ cup olive oil or canola oil
- ½ cup white sugar
- ½ cup brown sugar
- 2 eggs
- 1½ cups sliced strawberries
- 2 tbsp rolled oats
- Preheat your oven to 350 degrees.
- Sift together the white flour, whole wheat flour, oats, cinnamon, baking powder, and a big pinch of salt.
- In a separate bowl, whisk together the applesauce, canola oil, white and brown sugar, and eggs.
- Mix together the wet and dry ingredients, then gently stir in the strawberries. Pour the batter into a greased loaf pan and sprinkle with the 2 tbsp of oats.
- Bake for 50-55 minutes or until a toothpick inserted comes out clean. Let cool completely before slicing!
