We’ve all been there.
It’s that passing period between meals where you start to get a little peckish. You’re trying to eat healthy and cut out excess processed foods, but there’s a big bag full of pre-packaged cookies sitting on the counter tempting you. Calling to you. Whispering sweet (lol) nothings in your ear.
It’s like you’re being inextricably pulled toward those cookies. You blink and all of a sudden, you’re standing next to it with your hand halfway in the bag. What?! Who?! When?! WHERE?!
It’s the healthy snack conondrum. When my sweet tooth is raging, I want nothing more than a super fast fix and much too often, that involves store-bought junk food with lots of added processed sugar. It’s hard to escape unhealthy snacks, especially when you’re in college like me. It seems all too easy to just grab a cookie or five on your way out of the door and throw out your goals of eating healthier.
And that’s where these No-Bake Energy Cookies come in! They are a saving grace and seriously taste just as good as peanut butter cookie dough. And not just in the “oh, these taste good for being healthy” way, but just plain delicious. I took one bite of the dough and immediately fed it to two of my housemates who replied with a “WOW!”.
The best part about these cookies (other than tasting like cookie dough, I mean c’mon!!) is that they take just 4 ingredients and can be made in less than a minutes. You just throw everything into a food processor, roll the dough into circles, and squish em down. Voila! Healthy cookies that taste just like the real deal.
- ¼ cup peanut butter
- 1 cup pitted dates
- 2 tbsp peanuts
- 2 tbsp chopped dark chocolate
- Combine the peanut butter, dates, and peanuts in a food processor. Process for 10-15 seconds until evenly ground up.
- Remove the dough from the food processor and use your hands to mix in the dark chocolate.
- Form the dough into balls and use a fork to press down in the middle to form cookies.
