Vegan Pumpkin Spice Bedtime Drink- 100 calories and only 4 ingredients!

Hi friends!

I’m sorry to have been MIA lately. It’s been difficult to keep blogging up after the chaos that comes with moving back to school and settling in. Having two long organic chemistry labs + the lab reports that come with them on top of a full schedule doesn’t help too much either. I have lab on Mondays and Wednesdays from 6-10 at night and come home with absolutely no drive to get a recipe post up (fun fact: they usually take me around 4-6 hours each!). The one thing I DO want to do is unwind with something comforting to drink before tackling more things on my to-do list.

My current late-night drink of choice?

A Vegan Pumpkin Spice Bedtime Drink!

There was a time during my sophomore year where I was so constantly exhausted that I could drink a triple shot latte at 10 at night and then go to bed a few hours later. Not anymore. I’ve been trying to cut out coffee past 6 p.m (unless I really need it), but have really been missing the comfort that comes with sipping on something hot. My solution was to come up with a healthy + fall-flavored drink that wouldn’t keep me up all night!

This 4-ingredient mug of love comes together in under five minutes, is perfectly sweet (unlike some Starbucks drinks…) and couldn’t be simpler to make. Another benefit? It’s under 100 calories per serving and friendly to most diets!

I made a mug of this tonight for Kyle and I and decided at the last moment to photograph it before taking a sip. I like mine with vegan whipped coconut cream and a sprinkling of cinnamon and finely chopped walnuts on top for extra garnish!

Vegan Pumpkin Spice Bedtime Drink
  • 2½ cups unsweetened vanilla almond milk
  • 2 tbsp pumpkin puree
  • 2 tbsp maple syrup
  • ¼ tsp cinnamon
  • optional: vegan whipped cream + walnuts for garnish
  1. Whisk together all the ingredients on medium-low heat in a small saucepan until the drink is perfectly hot and no lumps remain.
  2. Serve hot!

    I’m showing this to Miguel. He always thinks it’s a good idea to drink coffee at 8 pm and then when he tries to go to bed at 11 he can’t sleep. …. duh. I think he just needs something to sip on, and this looks delicious!

    Cant wait to try this! I always get late night snacks/sweets cravings and have been trying to drink more tea before bed to hopefully avoid these urges but I am getting bored of my usual decaf kind. Plus i LOVE pumpkin :)

    Not bad. A little on the light side. I’ll probably add more sweetener, pumpkin and cinnamon next time.
