This recipe is one of those cooking experiments where you aren’t reaaaaalllly expecting too much out of them, but they turn out phenomenal.

You see, I’m in the middle ground when it comes to quinoa.

I picture myself running after the quinoa bandwagon screaming WAIT FOR MEEE and coming .002 seconds from catching it, but just falling short. I needed an extra boost to be converted to the golden brown quinoa side of things and this recipe gave me the exact hoist I needed!

Think perfectly browned, crispy-on-the-outside-fluffy-on-the-inside, bursting with Italian flavors (parmesan! sun dried tomatoes! herbs! garlic!), and just so darn cute.

To me, these Italian Quinoa Protein Patties remind me of falafel’s younger sister. A sibling that’s not as bad for you since it’s only very lightly fried in olive oil, but with all the same wonderful texture and with enough seasonings to make your tastebuds want to dance.

A patty party! Now that’s an event I wouldn’t mind going to ;) .

And these patties aren’t just a pretty face, they’re good for ya! Each patty is less than 80 calories each and full of fiber, protein, and are low in carbs if that’s what you’re looking for. AMEN!

On an unrelated note, what’s everyone up to this weekend?

Kyle and I are driving up to Santa Barbara on Saturday along with his roommate, Raamis. The boys are moving furniture into their new house and I’ll be shooting a wedding! I have been absolutely loving all the time I’ve been spending with my camera lately and — because I’m so excited to share more — here’s a glimpse at the Kate Spade-inspired shoot I did a few days ago!

Saturday will be go-go-go with the wedding, but Sunday is going to be a more low-key day and I plan to use it to hangout with Kyle and work on some upcoming recipes. I have a long list of recipes I want to try (which I usually come up with while lying in my bed at night trying to fall asleep…) and I can tell you right now that a solid half of them are pumpkin, salted caramel, or apple related. I even went as far as to buy some mini pumpkins for food photography props at the grocery store the other day even though it was 92 degrees outside.

If that’s no dedication to the fall spirit, I don’t know what is ;) .

Italian Quinoa Protein Patties- less than 80 calories each and low carb!

Ingredients
  • 3 eggs
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • 2 cups cooked quinoa
  • 1 cup panko bread crumbs
  • ¼ cup parmesan cheese
  • 4.5 oz frozen chopped spinach, cooked
  • 2 cloves garlic, diced
  • ½ cup diced onion
  • ¼ cup chopped sun dried tomatoes
  • 1 tbsp olive oil
Instructions
  1. Whisk together the eggs, Italian seasoning, and salt. Stir in the quinoa, panko, parmesan, spinach, garlic, onion, and chopped sun dried tomatoes.
  2. Heat a large skillet with the olive oil.
  3. Form the quinoa mixture into 15 patties and pan fry a few of them at a time for 2-3 minutes per side (or until golden brown).
  4. Enjoy!
