You know how sometime you see a new-to-you product in the grocery store and immediately toss it into your cart? No hesitation. No looking at the price tag. You just gotttttaaaa have it. And you know what? I’m not gonna lie. The minute I saw the new DelightFulls filled morsels from Nestle I squealed. I’ll admit that squeal became a piercing scream when I was contacted to created a recipe for them using the product. LIKE WHAT :shock: . Ok. No problemoooo. 

And thus, Fudgy Dark Chocolate Mint Cookies were born. 

These would be perfect to bring to any cookie exchange or holiday get-together. I would absolutely love to bake up a big batch to take to the annual one my friend Erin puts on, but I’ll be in Japan with my family eating sushi instead. I guess I’ll just have to live vicariously through you guys ;) .

We aren’t talking your normal, run-of-the-mill cookie here. I want you to look deep into the dark, chocolate-y swirls of brownie-esq goodness. Do it. You might see your soul in them. Then, please divert your eyes to that gorgeous minty frosting that’s swirled to perfection. It’s light as air and, with one bite, you’re transported to minty-sweet heaven. Angels are singing. And see those pretty mint-stuffed chocolate chips crushed on top (yes, you read that correctly…. these chocolate chips are filled themselves with delectable flavor)? The crunch and extra texture complement the fudgy brownie cookie and silky mint frosting like whooaaaaa.

Fudgy Dark Chocolate Mint Cookies

Serves: 18 cookies
  • 2 cups+ 2 tbsp sugar
  • ¾ cup vegetable oil
  • 1 cup cocoa powder
  • 1 tsp vanilla extract
  • 4 eggs
  • 2⅓ cup flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 package Mint Filled DelightFulls, reserving 2 tbsp of chips
  • ½ cup salted butter
  • 2 cups powdered sugar
  • ½ tsp mint extract
  • ¼ tsp green food coloring
  1. In a stand mixer or by hand, combine the sugar and oil. Stir in the cocoa, vanilla extract, and eggs until smooth.
  2. In a separate bowl, sift together the flour, baking powder, and salt.
  3. Combine the wet and dry ingredients completely, then gently stir in the Mint Filled DelightFulls, reserving two tablespoons for the garnish.
  4. Chill in the fridge for about 2 hours (overnight is fine too), then roll a heaping tablespoon sized piece of dough into a circle with your hands. Flatten the dough slightly, then place it on a parchment-paper lined baking sheet and repeat.
  5. Bake in a 350 degree over for 10-11 minutes or until done. Do not over bake! They will finish baking outside of the oven.
  6. Frosting:
  7. With a mixer, cream the butter until light and add in the powdered sugar. Mix together until thoroughly combined and fluffy. Add in the mint extract and food coloring and mix till the color and flavor are fully incoporated.
  8. When the cookies have cooled, ice them with the frosting (I cut a small hole at the tip of a ziplock bag, filled it with icing, and swirled on the icing that way). Roughly chop the remaining Mint Filled DelightFulls and garnish the tops of the cookies. Enjoy!

    I got so excited when I had seen that you were working with Nestle’ on one of your social media sites. I just knew whatever recipe you came up with, I wouldn’t be disappointed. These cookies sound and look so good. I just wish we had those morsels here :(
