  Smoked Salmon Pita Sandwiches. A healthy and easy lunch option that comes together in less than 5 minutes!   Sometimes I feel almost embarrassed to share a recipe. I usually love putting together complex recipes and enjoy spending hours in the kitchen, which eventually leads to me making a huge mess and vowing never to cook again. That, of course, lasts all of two hours before I’m back at it. It’s a viciously delicious cycle. Other times, I’m lazy. I don’t feel like cleaning anything up and even the idea of foraging through the cupboards for ingredients makes me cringe. Those days are the ones where I can usually be found absorbed into my couch with a gallon of ice cream, hanging out with my best friend 4eva Netflix. We get along just swell. Anyways, today was one of those days. I did, however, put together a tasty lunch that is, like I mentioned before, embarrassingly easy. Smoked Salmon Pita Sandwiches! Smoked Salmon and Arugula Pita Sandwiches
Quick, healthy, and delicious!
  • 2 whole wheat pita bread
  • 2 whole wheat pita bread
  • 2 whole wheat pita bread

  1. Cut pita bread in half to make two pockets.
  2. Slather on 1½ tbsp cream cheese in each pita pocket half.
  3. Fill each halved pita equally with 1 oz salmon and ¼th of the sliced onions, tomato, and arugula.

    I’m pretty lame. My favorite lunch box meal is a pb&j. Takes me back to my childhood every time. I always make it on white bread too because we never got to ave white bread growing up. However, these salmon pitas could be my new favorite.
