I hope you all enjoyed your weekend- I know I certainly did! Let’s kick off the week with some Marvelous in My Monday fun and a great game day recipe. 

Marvelous is a fantastic workout!

Yesterday was one of those days where I didn’t really feel like working out, but had no excuse not to move. I headed over to the gym and created this bad boy, which ended up being a great workout and left me feeling sweaty and accomplished. 

It was easy to get myself on the treadmill since I could tell myself I was only running half a mile at a time, and I loved how quickly the time passed since I was switching up running and incline walking. It’s weird, but I’m more sore today than I usually am on leg day!

Marvelous is sharing my favorite dip recipe!

Okay, you guys… you NEED to try this dip. I’m known as the “dip girl” and anytime there’s any sort of potluck, I’m told that I need to bring it. It’s one of those foods that almost ruins the party since everyone just stands around the platter concentrating on eating instead of talking.

I got this recipe from my mom, who in turn received it from one of her teacher friends. The original involves more fatty ingredients (yum), but I was easily able to lighten it up so that it won’t weigh you down (literally) on game day or wherever you choose to bring it! Trust me, it’s addictively good and reasonably low calorie for the flavor punch it delivers!

For the record, my friend Kate and I demolished almost the entire thing ourselves yesterday while we watched our boyfriends work laboriously with woodcutters and automatic saws. The good life.

The Best Skinny Dip Ever
 
For under 85 calories a serving, this easy skinny dip will have you singing!

Serves: 10
Ingredients
  • 1 container Fritos Bean Dip
  • ⅓ cup light sour cream
  • ⅓ cup reduced fat mayonnaise
  • 1.25 tbsp taco seasoning (preferably Lawry's)
  • ⅓ cup shredded 2% cheddar cheese
  • ½ avocado, diced
  • 1 medium tomato, diced
  • green onion, optional
Instructions
  1. Spread the bean dip evenly in a serving plate.
  2. In a separate bowl, mix together the sour cream, mayonnaise, and taco seasoning. Top bean dip evenly with mixture.
  3. Sprinkle the cheese on the sour cream mixture, followed by the diced avocado, tomato, and green onion.
  4. Serve with tortilla chips!
Notes
*To keep avocado from browning, mix diced pieces with lemon juice.

Marvelous is sweaty hikes with my favorite guy!

IMG_3159I love going on active dates with Kyle, especially if it involves hiking or playing tennis! We had a great 4.5 mile hike on Saturday with two of our favorite people to double date with. Mixing in fun cardio with the gym definitely keep me from becoming bored with my routine and loving fitness!

And lastly for today, marvelous are my Dark Chocolate Avocado Truffles!

I whipped up another batch for Kyle since he likes to have them in the morning with his coffee, and they were gone in a day. I actually had a 5 minute long conversation with his Dad later about how unreal they are. They’re SO fudgy and you can’t taste the avocado at all. He was dumbfounded!

    Letting the boys work while you girls were ‘skinny-dipping’ [in the most inoffensive way ;)]? Sounds like my kind of day. And hiking is one of the best outdoor activities yet sadly a bit disregarded in my opinion. Hope I can make it to my parents’ for a nice hike through the forests sometime soon.

    The “I only have to go 10 minutes” or “I only have to run 1 mile” line of thinking is one of my favourite ways to get my butt moving when I’m really not feeling it. The hardest part is usually to just get moving, and once that’s over and done with, it actually ends up feeling pretty good. And that dip… gah! I could seriously go for some of that right about now. Do you deliver? ;)

    That’s an awesome tready workout! That’s the only way I can do the treadmill – otherwise I just get SO bored. Changing up pace and incline is tons of fun! And YES to that dip – sounds amazing! I went ahead and pinned that yum picture! Speaking of, your pictures are so cute! :) Your food looks amazing!

    What a perfect name for your workout! I love it. Actually, I love your entire blog title and post. Ms. Dippy, (I hope you take that as a complimentary name and not as a slight ;)) that dip sure looks scrumptious. You never cease to come up with these fab recipes (oh and the pictures, ah! makes me feel as if I have that dip right in front of me!)

    Such a great idea for a workout. I will have to give that a try!

    I’m so frustrated because I was going to hit the gym again last week and then I got a cold and even softball made me get into a crazy coughing fit yesterday, so I need to wait it out a bit. So frustrating!

    Somebody should have been taping my reaction when I read ‘Dark Chocolate Avocado Truffles’. My eyes widened, and mouth dropped – like Macaulay Culkin in Home Alone.

    They look AMAZING! They are on my list of things to make this weekend :)

    And well done on the work out – nothing can be a tougher beast to tame than when you don’t “feel” like working out. Great work :)
